A comforting creamy tomato soup paired with a crispy grilled cheese sandwich.
Ingredients

- 2 cans Diced Tomatoes
- 1 cup Heavy Cream
- 1 cup Vegetable Broth
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 tablespoon Olive Oil
- 1 clove Garlic (minced)
- 1 onion Onion (chopped)
- 8 slices Bread
- 4 slices Cheese (your choice)
- 4 tablespoons Butter
Instructions
- In a pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
- Add diced tomatoes, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Blend the soup until smooth, then stir in heavy cream and heat through.
- Butter one side of each slice of bread. Place cheese between two slices, buttered sides out.
- In a skillet, grill the sandwich over medium heat until golden brown on both sides and cheese is melted.
- Serve the creamy tomato soup hot with grilled cheese sandwiches on the side.
