- 4 boneless chicken thighs or breasts
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 teaspoon dried rosemary
- 3 tablespoons butter (for sauce)
- 4 garlic cloves, minced
- 1 cup cooking cream
- 1/2 cup chicken broth
- 2 tablespoons capers, rinsed
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- Salt to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Prepare Chicken: Pat chicken dry and season with paprika, garlic powder, rosemary, salt, and pepper.
- Sear: Heat olive oil and butter in a skillet over medium-high heat. Cook chicken for 5–6 minutes per side until deeply golden and crispy. Remove and set aside.
- Sauté Garlic: In the same pan, melt butter and cook garlic until fragrant.
- Deglaze: Pour in chicken broth and scrape up all the caramelized bits.
- Create Creaminess: Stir in cream, capers, thyme, salt, and pepper. Let it simmer gently until slightly thickened.
- Return Chicken: Place chicken back into the sauce.
- Coat: Spoon sauce over the chicken and let simmer for 5 minutes until fully infused.
- Garnish: Finish with freshly chopped parsley and a touch of rosemary for aroma.
