  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves minced garlic
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 chopped onion
  • 1 bell pepper (red or green)
  • 2 cloves minced garlic
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 12 ounces pasta (penne or rotini)
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • Pepper to taste
  • Additional Cajun seasoning to taste
  • Freshly chopped parsley for garnish

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, and Cajun seasoning. Mix until just combined. Form the mixture into bite-sized meatballs, about 1 inch in diameter.
  2. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the meatballs in batches, searing them on all sides until browned, about 5 minutes. Remove the meatballs from the pot and set them aside.
  3. In the same pot, add another tablespoon of olive oil if needed. Add chopped onion and bell pepper and sauté until softened, about 3-4 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Pour in chicken or vegetable broth, along with heavy cream. Bring the mixture to a simmer, then add pasta. Stir well to combine.
  5. Gently place the browned meatballs back into the pot. Cover and let simmer for 12-15 minutes, or until the pasta is cooked al dente and has absorbed most of the liquid.
  6. Once the pasta is cooked, stir in grated Parmesan cheese and adjust seasoning with salt, pepper, and additional Cajun seasoning to taste. If the sauce is too thick, add a splash more broth or cream to reach your desired consistency.
  7. Serve your One Pot Creamy Cajun Meatball Pasta hot, garnished with freshly chopped parsley and an extra sprinkle of Parmesan cheese.
