Soft Coffee Cake Cookies with Vanilla Glaze


Ingredients

  • ½ cup unsalted butter (softened)
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup sour cream (or plain Greek yogurt)
  • ½ cup all-purpose flour
  • ⅓ cup brown sugar
  • 1 teaspoon cinnamon
  • pinch salt
  • 4 tablespoons melted butter
  • ¾ cup powdered sugar
  • 12 tablespoons milk
  • ½ tsp vanilla extract

Instructions

  1. In a bowl, mix flour, brown sugar, cinnamon, and salt. Stir in melted butter until crumbly. Set aside (or chill for thicker crumbs).
  2. Cream butter, granulated sugar, and brown sugar until light and fluffy. Mix in egg and vanilla. Add sour cream and mix until smooth.
  3. In another bowl, whisk flour, baking soda, baking powder, and salt.
  4. Gradually mix dry ingredients into wet until combined.
  5. Chill in the fridge for at least 20 minutes.
  6. Preheat the oven to 350°F.
  7. Scoop 2 tablespoons of dough onto a lined baking sheet. Slightly flatten each cookie.
  8. Generously press crumble topping on top (don’t be shy!).
  9. Bake at 350°F for 12-14 minutes. Edges should be set; centers should be soft.
  10. Cool cookies completely. Drizzle with vanilla glaze.
