Soft Coffee Cake Cookies with Vanilla Glaze

- ½ cup unsalted butter (softened)
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup sour cream (or plain Greek yogurt)
- ½ cup all-purpose flour
- ⅓ cup brown sugar
- 1 teaspoon cinnamon
- pinch salt
- 4 tablespoons melted butter
- ¾ cup powdered sugar
- 1–2 tablespoons milk
- ½ tsp vanilla extract
Instructions
- In a bowl, mix flour, brown sugar, cinnamon, and salt. Stir in melted butter until crumbly. Set aside (or chill for thicker crumbs).
- Cream butter, granulated sugar, and brown sugar until light and fluffy. Mix in egg and vanilla. Add sour cream and mix until smooth.
- In another bowl, whisk flour, baking soda, baking powder, and salt.
- Gradually mix dry ingredients into wet until combined.
- Chill in the fridge for at least 20 minutes.
- Preheat the oven to 350°F.
- Scoop 2 tablespoons of dough onto a lined baking sheet. Slightly flatten each cookie.
- Generously press crumble topping on top (don’t be shy!).
- Bake at 350°F for 12-14 minutes. Edges should be set; centers should be soft.
- Cool cookies completely. Drizzle with vanilla glaze.
