  • 14 ounces Extra Firm Tofu (Press to remove moisture.)
  • 2 tablespoons Cornstarch (For coating.)
  • 1 tablespoon Avocado Oil (Or olive oil.)
  • 3 tablespoons Soy Sauce (Tamari for gluten-free.)
  • 1 cup Coconut Milk (Full-fat recommended.)
  • 2 tablespoons Maple Syrup (Agave syrup can be used.)
  • 1 teaspoon Paprika (Smoked paprika for extra flavor.)
  • 1 Juice Lime (Freshly squeezed.)
  • 1 medium Shallot (Sautéed.)
  • 1 inch Fresh Ginger (Minced.)
  • 2 cloves Garlic (Minced.)
  • ¼ cup Cilantro (Chopped.)
  • 2 cups Jasmine Rice (Cooked.)

Instructions

  1. Rinse and combine jasmine rice with water. Bring to boil, cover, and simmer for 15 minutes.
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Press and cube the tofu, then toss with avocado oil, soy sauce, and cornstarch.
  4. Spread tofu on the baking sheet and bake for 20 minutes, flipping halfway through.
  5. In a skillet, heat avocado oil and sauté shallot, ginger, and garlic for 1-2 minutes.
  6. Pour in coconut milk, soy sauce, maple syrup, and paprika; simmer for 3-4 minutes.
  7. Fold in baked tofu and lime juice, cooking for an additional 2 minutes.
  8. Serve over jasmine rice, garnished with cilantro and lime wedges.
