  • 1/2 cup Plant-Based Yogurt (Plain, unsweetened variety)
  • 2 tablespoons Lemon Juice (Fresh preferred)
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Dijon Mustard (Optional)
  • 2 tablespoons Dill (Fresh recommended)
  • 1 tablespoon Olive Oil (Extra virgin for drizzling)
  • 1/4 cup Chopped Nuts or Seeds (Optional for crunch)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss your rinsed and dried chickpeas with olive oil, onion powder, and salt. Spread them in a single layer on a baking sheet and roast for 25-30 minutes, until crispy and golden brown.
  3. Bring a pot of salted water to a boil, then add your favorite pasta. Cook according to package instructions for al dente texture, usually around 8-10 minutes. Drain and toss with a splash of olive oil to prevent sticking.
  4. In a mixing bowl, combine tahini, plant-based yogurt, fresh lemon juice, apple cider vinegar, Dijon mustard, dill, and a little water. Whisk until smooth, adjusting with more water if desired for consistency.
  5. In a large bowl, mix the cooked pasta, roasted chickpeas, chopped cucumber, and tomatoes. Drizzle the creamy dressing over the top and toss gently until everything is well coated.
  6. Enjoy this salad immediately or transfer to an airtight container in the fridge for up to 3 days. If the dressing thickens, add a splash of water and toss before serving.
