  • 1/4 cup fresh parsley (chopped)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 clove garlic (minced)
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the pasta according to package instructions, then drain and let cool.
  2. In a large mixing bowl, combine the chickpeas, diced avocado, cherry tomatoes, cucumber, red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
  4. Add the cooled pasta to the vegetable mixture and pour the dressing over the top. Toss to combine.
