  • 1 cup All-Purpose Flour (gluten-free flour blends are suitable)
  • 1 teaspoon Baking Soda (make sure it’s fresh)
  • 1/2 teaspoon Salt
  • 1/2 cup Chopped Walnuts (or any nuts, can be omitted)
  • 1/4 cup Pumpkin Seeds (or sunflower seeds, optional)
  • 1/4 cup Sunflower Seeds (or any chopped nuts)
  • 1/2 cup Dried Cranberries/Chopped Dried Apricots (raisins or chopped dates as substitutes)
  • 1 cup Dark Chocolate Chips (semi-sweet or milk chocolate can be used)

Instructions

  1. In a large bowl, beat together the softened butter, brown sugar, and honey until fluffy. Add in the egg, peanut butter, and vanilla; stir until well combined and smooth.
  2. In a separate bowl, whisk together the flour, baking soda, and salt.
  3. Gradually fold the dry mixture into the wet mixture. Add the chopped walnuts, pumpkin seeds, sunflower seeds, dried fruits, and dark chocolate chips. Mix until just combined.
  4. Cover the bowl with plastic wrap and refrigerate the dough for 30 minutes.
  5. Preheat your oven to 350°F and line your baking sheets with parchment paper.
  6. Using your hands, roll the dough into 1.5-ounce balls. Flatten them slightly and place on the baking sheets.
  7. Bake the cookies for 11-13 minutes or until golden around the edges. Let them cool slightly before transferring to a wire rack.
