- 2 cups Fresh Cherries
- 3 tbsp Granulated Sugar
- ¼ cup Amaretto Liqueur
- 1 tbsp Lemon Juice
- 1 cup Heavy Cream
- 1 cup Mascarpone Cheese
- â…“ cup Powdered Sugar
- 1 tsp Vanilla Extract
- ¾ cup Brewed Espresso
- 1 pack (approx. 24) Ladyfinger Biscuits
- Unsweetened Cocoa Powder
- Fresh Cherries & Shaved Dark Chocolate (optional)
Instructions
- In a saucepan, combine the fresh cherries, granulated sugar, lemon juice, and Amaretto. Cook this mixture over medium heat for about 5–7 minutes until the cherries are soft and syrupy. Allow it to cool completely before using.
- In a large bowl, beat the cold heavy cream until soft peaks form.
- In another bowl, whisk together the mascarpone cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the whipped cream until well combined.
- Mix the Amaretto into the cooled espresso, then pour it into a shallow dish.
- Quickly dip each ladyfinger into the espresso mixture, then layer them in your dish. Spread half of the mascarpone cream mixture over the ladyfingers, followed by half of the cherry mixture, and repeat the layers.
- Cover your assembled tiramisu with plastic wrap and refrigerate for at least 4 hours, but preferably overnight.
- Just before serving, dust the top with unsweetened cocoa powder, and garnish with fresh cherries and shaved dark chocolate.
