Best Carne Asada Tacos Recipe

- 1 lb carne asada
- ⅓ cup pickled onions
- 6 corn tortillas
- ⅓ cup salsa verde
- ⅓ cup queso fresco
- 4 lime wedges
- ¼ cup cilantro, chopped
Instructions
- Add ½ cup orange juice, 2 tbsp. lime juice, 2 tbsp. lemon juice, 1 tbsp. olive oil, 1 tbsp soy sauce, 1 tbsp brown sugar, 1/3 cup chopped cilantro, 7 oz chipotle peppers, 2 tbsp fresh chopped garlic, 1 tsp. cumin, 1 tsp oregano, 1 tsp black pepper, and 1 tsp kosher salt to a bowl.
- Whisk the mixture until the sugar dissolves. Set aside 1/2 cup of the marinade for later, to serve with the steak.
- Pat the steak dry with a paper towel, then place it in a plastic bag or deep bowl.
- Pour the marinade over the steak in the bag or bowl. Squeeze out the air, then seal the bag. Marinate for 3 hours (up to 8 hours in advance for a deeper flavor).
- Preheat your grill or grill pan over high heat. If using a pellet smoker, set it to 450 degrees F.
- Remove the steak from the marinade and drain off any excess.
- Place the skirt steak on the hot grill or grill pan and cook for 6-7 minutes to develop a good sear.
- Flip the steak and cook for an additional 5-6 minutes, until the internal temperature reaches 125 degrees for medium-rare.
- Remove from the heat and let the steak rest for 10 minutes to redistribute the juices. Tent with aluminum foil to keep warm.
- Slice against the grain and serve with corn tortillas and toppings.
