Ingredients

  • 1 lb carne asada
  • ⅓ cup pickled onions
  • 6 corn tortillas
  • ⅓ cup salsa verde
  • ⅓ cup queso fresco
  • 4 lime wedges
  • ¼ cup cilantro, chopped

Instructions

  1. Add ½ cup orange juice, 2 tbsp. lime juice, 2 tbsp. lemon juice, 1 tbsp. olive oil, 1 tbsp soy sauce, 1 tbsp brown sugar, 1/3 cup chopped cilantro, 7 oz chipotle peppers, 2 tbsp fresh chopped garlic, 1 tsp. cumin, 1 tsp oregano, 1 tsp black pepper, and 1 tsp kosher salt to a bowl.
  2. Whisk the mixture until the sugar dissolves. Set aside 1/2 cup of the marinade for later, to serve with the steak.
  3. Pat the steak dry with a paper towel, then place it in a plastic bag or deep bowl.
  4. Pour the marinade over the steak in the bag or bowl. Squeeze out the air, then seal the bag. Marinate for 3 hours (up to 8 hours in advance for a deeper flavor).
  5. Preheat your grill or grill pan over high heat. If using a pellet smoker, set it to 450 degrees F.
  6. Remove the steak from the marinade and drain off any excess.
  7. Place the skirt steak on the hot grill or grill pan and cook for 6-7 minutes to develop a good sear.
  8. Flip the steak and cook for an additional 5-6 minutes, until the internal temperature reaches 125 degrees for medium-rare.
  9. Remove from the heat and let the steak rest for 10 minutes to redistribute the juices. Tent with aluminum foil to keep warm.
  10. Slice against the grain and serve with corn tortillas and toppings.
