  • 2 large yellow onions, thinly sliced
  • 8 small flour tortillas
  • 8 slices cheddar cheese or 2 cups shredded cheddar
  • 1/2 cup sliced dill pickles
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon pickle relish
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 1/2 teaspoons salt, divided
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat a large skillet or griddle over medium heat.
  2. In a small bowl, stir together the mayonnaise, ketchup, mustard, and pickle relish until smooth to make the burger sauce.
  3. In a separate bowl, combine the ground beef with Worcestershire sauce, garlic powder, onion powder, 1 teaspoon of the salt, and the black pepper. Mix gently just until combined.
  4. Add the olive oil and sliced onions to the skillet with the remaining 1/2 teaspoon salt. Cook for 18 to 22 minutes, stirring often, until soft, deeply golden, and caramelised. Transfer to a bowl.
  5. Divide the seasoned beef into 8 equal portions. Press one portion thinly across one side of each tortilla, spreading it nearly to the edges.
  6. Place the tortillas beef-side down in the hot skillet, working in batches. Press lightly with a spatula and cook for 2 to 3 minutes until the beef is browned and crisp at the edges.
  7. Flip each taco, top with cheddar cheese, and cook for 1 to 2 minutes more until the tortilla is golden and the cheese is melted.
  8. Top each taco with caramelised onions, burger sauce, and sliced dill pickles. Fold gently and serve immediately.
