- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 16 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 cup prepared vanilla pastry cream
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
- Mix graham cracker crumbs with melted butter until combined, then press firmly into the bottom of the pan.
- In a large bowl, beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition.
- Mix in vanilla extract and sour cream until fully incorporated.
- Pour half of the cheesecake batter over the crust.
- Spoon vanilla pastry cream evenly over the batter layer.
- Top with remaining cheesecake batter and smooth the surface.
- Bake for 50–60 minutes until the center is slightly set but still slightly jiggly.
- Turn off oven and let cheesecake cool gradually, then refrigerate for at least 4 hours or overnight.
- Heat heavy cream until hot but not boiling, then pour over chocolate chips.
- Let sit for 2 minutes, then stir until smooth ganache forms.
- Spread ganache evenly over chilled cheesecake.
- Slice and serve chilled.
