- 1 1/2 cups all-purpose flour, divided
- 1 1/4 cups granulated sugar, divided
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
- 2 large eggs
- 1/3 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup fresh blueberries
- 2 tablespoons powdered sugar, optional for dusting
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, stir together 1 cup of the all-purpose flour, 1/4 cup of the granulated sugar, the melted butter, and salt until a soft dough forms.
- Press the crust mixture evenly into the bottom of the prepared pan.
- Bake the crust for 15 minutes, until lightly set and just barely golden at the edges.
- In a separate bowl, whisk together the eggs, remaining 1 cup granulated sugar, remaining 1/2 cup flour, lemon juice, and lemon zest until smooth.
- Gently fold in the blueberries.
- Pour the filling over the warm crust.
- Bake for 22 to 25 minutes, until the center is set and only slightly jiggles.
- Cool completely in the pan, then chill for at least 1 hour.
- Lift out, dust with powdered sugar if desired, and cut into 9 bars.
