- 1 teaspoon cornstarch
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 large egg
- 1 tablespoon vanilla extract
- 1 to 1 1/2 teaspoons royal blue gel food coloring
- 3/4 cup white chocolate chips
- Extra white chocolate chips for topping
Instructions
- Preheat oven to 350°F and line 2 baking sheets with parchment paper.
- Whisk together the flour, cornstarch, baking soda, baking powder, and salt in a medium bowl and set aside.
- Beat the softened butter, granulated sugar, and brown sugar until light and creamy, about 2 to 3 minutes.
- Mix in the egg and vanilla extract until fully combined, then add the blue gel food coloring and mix until evenly colored.
- Add the dry ingredients to the wet ingredients and mix just until a soft dough forms, then fold in the white chocolate chips.
- Scoop the dough into 2-tablespoon portions and place on the prepared baking sheets, pressing extra white chocolate chips on top.
- Bake for 9 to 11 minutes until the edges are set and the centers are still soft.
- Round the cookies gently with a spoon right after baking if needed, then cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
