- 4 large Egg Whites (at room temperature)
- 1 cup Granulated Sugar (or caster sugar)
- 1 teaspoon Purple Food Coloring (optional)
- 1 tablespoon Cornstarch
- 1 teaspoon Lemon Juice
- 2 cups Blackberries (fresh)
- 1/2 cup Additional Sugar (or maple syrup/honey)
- 1/4 cup Water
- 1 cup Heavy Cream (cold)
- 1/4 cup Powdered Sugar
Instructions
- Preheat Oven to 250°F (120°C)
- Beat egg whites until frothy, gradually add sugar until stiff peaks form (10-12 mins).
- Fold in lemon juice and cornstarch gently.
- Pipe meringue into 3.5-inch nests on parchment-lined baking sheets.
- Bake for 1 hour, turn off oven, leave meringues inside for 30 minutes.
- Cook blackberries, sugar, lemon juice, and water for 5-10 minutes; then add cornstarch and thicken.
- Whip cold heavy cream with powdered sugar until stiff peaks.
- Fill meringue nests with blackberry jam and top with whipped cream; add extra blackberries.
