Ingredients

  • 1 cup Granulated Sugar (or caster sugar)
  • 1 teaspoon Purple Food Coloring (optional)
  • 1 tablespoon Cornstarch
  • 1 teaspoon Lemon Juice
  • 2 cups Blackberries (fresh)
  • 1/2 cup Additional Sugar (or maple syrup/honey)
  • 1/4 cup Water
  • 1 cup Heavy Cream (cold)
  • 1/4 cup Powdered Sugar

Instructions

  1. Preheat Oven to 250°F (120°C)
  2. Beat egg whites until frothy, gradually add sugar until stiff peaks form (10-12 mins).
  3. Fold in lemon juice and cornstarch gently.
  4. Pipe meringue into 3.5-inch nests on parchment-lined baking sheets.
  5. Bake for 1 hour, turn off oven, leave meringues inside for 30 minutes.
  6. Cook blackberries, sugar, lemon juice, and water for 5-10 minutes; then add cornstarch and thicken.
  7. Whip cold heavy cream with powdered sugar until stiff peaks.
  8. Fill meringue nests with blackberry jam and top with whipped cream; add extra blackberries.
