A flavorful and nutritious quinoa bowl featuring crispy chickpeas, smoky BBQ sauce, and creamy ranch dressing.

- 1/2 medium red onion, very thinly sliced
- 1/2 cup apple cider vinegar
- 1 Tbsp. sweetener of choice (granulated sugar, honey, or maple syrup)
- 1 tsp. kosher salt
- 3/4 cup dry quinoa
- 1 1/2 cups vegetable broth
- 1 Tbsp. extra-virgin olive oil
- 1 (15-oz.) can chickpeas, rinsed and drained
- 1/2 tsp. smoked paprika
- 1/4 tsp. garlic powder
- 1/4 cup BBQ sauce
- 3/4 cup frozen/thawed fire-roasted corn
- 1 medium avocado, cut into chunks
- 1/2 cup grated sharp white cheddar cheese
- 1/3 cup 2% plain Greek yogurt
- 2 Tbsp. mayonnaise
- 1 1/2 tsp. fresh lemon juice
- 1 Tbsp. finely chopped fresh chives
- 1/2 tsp. dried dill (or 2 tsp. fresh)
- 1/2 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. each kosher salt and black pepper
Instructions
- Combine the sliced red onion, apple cider vinegar, sweetener, and kosher salt in a small bowl. Set aside to marinate for 15-30 minutes.
- Rinse the quinoa under cold water, then combine it with vegetable broth in a medium saucepan. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes.
- Preheat the oven to 400°F (200°C). In a bowl, mix chickpeas with olive oil, smoked paprika, garlic powder, and salt and pepper. Spread on a baking sheet and roast for 20-25 minutes.
- Toss roasted chickpeas with BBQ sauce in a small bowl. Warm the fire-roasted corn in a pot or microwave.
- Mix together Greek yogurt, mayonnaise, lemon juice, chives, dill, garlic powder, onion powder, and seasoning in another bowl.
- Assemble the bowls starting with quinoa, topped with BBQ chickpeas, corn, pickled onions, avocado, and cheddar. Drizzle with ranch dressing.
