Description

Ingredients

  • 1/2 medium red onion, very thinly sliced
  • 1/2 cup apple cider vinegar
  • 1 Tbsp. sweetener of choice (granulated sugar, honey, or maple syrup)
  • 1 tsp. kosher salt
  • 3/4 cup dry quinoa
  • 1 1/2 cups vegetable broth
  • 1 Tbsp. extra-virgin olive oil
  • 1 (15-oz.) can chickpeas, rinsed and drained
  • 1/2 tsp. smoked paprika
  • 1/4 tsp. garlic powder
  • 1/4 cup BBQ sauce
  • 3/4 cup frozen/thawed fire-roasted corn
  • 1 medium avocado, cut into chunks
  • 1/2 cup grated sharp white cheddar cheese
  • 1/3 cup 2% plain Greek yogurt
  • 2 Tbsp. mayonnaise
  • 1 1/2 tsp. fresh lemon juice
  • 1 Tbsp. finely chopped fresh chives
  • 1/2 tsp. dried dill (or 2 tsp. fresh)
  • 1/2 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/4 tsp. each kosher salt and black pepper

Instructions

  1. Combine the sliced red onion, apple cider vinegar, sweetener, and kosher salt in a small bowl. Set aside to marinate for 15-30 minutes.
  2. Rinse the quinoa under cold water, then combine it with vegetable broth in a medium saucepan. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes.
  3. Preheat the oven to 400°F (200°C). In a bowl, mix chickpeas with olive oil, smoked paprika, garlic powder, and salt and pepper. Spread on a baking sheet and roast for 20-25 minutes.
  4. Toss roasted chickpeas with BBQ sauce in a small bowl. Warm the fire-roasted corn in a pot or microwave.
  5. Mix together Greek yogurt, mayonnaise, lemon juice, chives, dill, garlic powder, onion powder, and seasoning in another bowl.
  6. Assemble the bowls starting with quinoa, topped with BBQ chickpeas, corn, pickled onions, avocado, and cheddar. Drizzle with ranch dressing.
  7. Enjoy your meal in a cozy bowl!
