Ingredients
- rotisserie chicken or shredded cooked chicken breast
- BBQ sauce
- tortilla chips
- shredded cheddar cheese
- jalapeños
- green onions
- sour cream or Greek yogurt or avocado
Instructions
- Preheat your oven to 350°F (175°C).
- If you’re using rotisserie chicken, shred it into bite-sized pieces. If you’re using cooked chicken breast, shred or chop it up similarly. Mix the chicken with your chosen BBQ sauce, making sure it’s well-coated.
- Spread a generous layer of tortilla chips on a baking sheet lined with parchment paper.
- Spoon the BBQ chicken mixture evenly over the chips.
- Sprinkle a generous amount of shredded cheese over the chicken layer.
- Place the baking sheet in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
- Once out of the oven, top your nachos with sliced jalapeños, chopped green onions, and a drizzle of sour cream or your chosen alternative.
- Serve them with extra BBQ sauce on the side for dipping!
