Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup cornstarch
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha
  • 2 tablespoons green onions, chopped
  • Salt to taste

Instructions

  1. Cut the chicken breast into bite-sized pieces (about 1-inch chunks). Season the chicken pieces generously with salt.
  2. Place cornstarch in a shallow dish. Coat each chicken piece in cornstarch.
  3. Dip the cornstarch-coated chicken into the beaten eggs, letting excess drip off.
  4. Roll each piece in panko breadcrumbs until fully covered.
  5. Heat about 1 inch of oil in a large frying pan over medium-high heat until it sizzles when a small piece of bread is dropped in.
  6. Carefully add coated chicken pieces to the hot oil, without overcrowding the pan. Fry for 4-5 minutes per side, until golden brown and crispy.
  7. Transfer fried chicken to a plate lined with paper towels to drain excess oil.
  8. In a mixing bowl, combine mayonnaise, sweet chili sauce, and sriracha until smooth and creamy. Adjust sriracha for desired spice level.
  9. In a large mixing bowl, toss the fried chicken pieces in the Bang Bang sauce until well coated.
  10. Garnish with chopped green onions and serve immediately.
