- 1 pound chicken breast, cut into bite-sized pieces
- 1 cup cornstarch
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tablespoons sriracha
- 2 tablespoons green onions, chopped
- Salt to taste
Instructions
- Cut the chicken breast into bite-sized pieces (about 1-inch chunks). Season the chicken pieces generously with salt.
- Place cornstarch in a shallow dish. Coat each chicken piece in cornstarch.
- Dip the cornstarch-coated chicken into the beaten eggs, letting excess drip off.
- Roll each piece in panko breadcrumbs until fully covered.
- Heat about 1 inch of oil in a large frying pan over medium-high heat until it sizzles when a small piece of bread is dropped in.
- Carefully add coated chicken pieces to the hot oil, without overcrowding the pan. Fry for 4-5 minutes per side, until golden brown and crispy.
- Transfer fried chicken to a plate lined with paper towels to drain excess oil.
- In a mixing bowl, combine mayonnaise, sweet chili sauce, and sriracha until smooth and creamy. Adjust sriracha for desired spice level.
- In a large mixing bowl, toss the fried chicken pieces in the Bang Bang sauce until well coated.
- Garnish with chopped green onions and serve immediately.
