Description

Bakery style, moist banana bread muffins topped with a delicious cinnamon crumble.


Ingredients

  • 3/4 cup all purpose flour
  • 1/2 cup brown sugar (packed)
  • 3/4 teaspoon ground cinnamon
  • 6 tablespoons unsalted butter (melted)
  • 2 1/4 cups all purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup light brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup vegetable oil
  • 4 overly ripe bananas (peeled and mashed, 1 1/2 cups worth)

Instructions

  1. Preheat the oven to 425°F. Spray a 6 sized large muffin tin with nonstick cooking spray. Set aside.
  2. Stir the flour, brown sugar, and cinnamon together to combine. Pour the melted butter overtop and mix to combine. Place in the fridge to chill while you make the cake batter.
  3. In a medium bowl, mix the flour, baking powder, baking soda, cinnamon, and salt.
  4. In a large bowl, beat the butter and sugars on medium speed for 2 minutes. Add the eggs, vanilla, sour cream, vegetable oil, and mashed bananas and mix until combined. Add the dry ingredients and mix until no flour streaks remain, but don’t overmix!
  5. Portion the batter into the muffin tins, filling about 1/4 inch from the top (about 1/2 cup worth of batter). Remove the crumb topping from the fridge. Evenly distribute the crumble along the top of the batter.
  6. Bake for 5 minutes at 425°F, then turn the oven to 350°F and continue baking for 18-20 minutes or until a toothpick inserted in the center comes out clean.

Notes

  • These muffins don’t have an overly large dome, but they are still moist and delicious.
  • Store leftovers in an airtight container at room temperature for 4-5 days.
