Ingredients

Scale
  • 4 fillets Skinless Salmon (about 5 oz each; wild-caught preferred)
  • to taste Ground Black Pepper (adjust to your taste)
  • to taste Salt (using sea salt can improve flavor)
  • 1/4 cup Freshly Squeezed Lemon Juice (can substitute with lime juice)
  • 2 tablespoons Olive Oil (can replace with melted coconut oil)
  • 2 cloves Minced Garlic (adjust based on personal preference)
  • 1 tablespoon Old-Style Dijon Mustard (whole grain mustard for texture)
  • 1/2 cup Unsalted Butter (ghee can be a dairy-free alternative)
  • 1 clove Minced Garlic (adds richness)
  • 1 cup Heavy Cream (or half and half; Greek yogurt may alter consistency)
  • 2 tablespoons Chopped Parsley (chives can be used for milder flavor)
  • 4 slices Lemon (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C) with rack in the center.
  2. In a bowl, combine lemon juice, olive oil, minced garlic, and Dijon mustard. Whisk until blended.
  3. Place salmon fillets in a baking dish and pour marinade over. Rub marinade into fillets, season with pepper and salt.
  4. Bake salmon for 10-15 minutes, until it flakes easily with a fork.
  5. Melt butter in a saucepan over medium heat. Add minced garlic and sauté for 30 seconds.
  6. Stir in heavy cream and bring to a boil. Cook until slightly thickened, about 3-5 minutes.
  7. Remove from heat, stir in remaining lemon juice, parsley, and adjust seasoning with salt and pepper.
  8. Pour creamy lemon butter sauce over cooked salmon. Let it rest for 5-10 minutes before serving with lemon slices.
