- 4 sheets rice paper
- 2 tablespoons neutral oil (canola or avocado)
- 1 teaspoon everything bagel seasoning (optional)
Instructions
- Begin by heating a non-stick skillet over medium heat. Lightly brush it with your chosen oil.
- In a mixing bowl, whisk the eggs until fluffy. Gently fold in the shredded cheddar cheese, optional veggies, salt, and pepper.
- Dip a rice paper sheet into warm water for about 5 seconds to soften it. Lay the sheet flat on a clean surface.
- Spoon a portion of the egg mixture along one edge of the rice paper. Roll it into a log, then coil it into a spiral shape.
- Place one spiral into the heated skillet. Cook it slowly over medium-low heat, pressing gently with a spatula for even cooking.
- Once the bottom side is golden brown, carefully flip the spiral to crisp up the other side.
- While the spirals are still warm, sprinkle them with everything bagel seasoning.
- Serve the spirals hot, alongside your favorite dipping sauces or sides.
