  • 4 sheets rice paper
  • 2 tablespoons neutral oil (canola or avocado)
  • 1 teaspoon everything bagel seasoning (optional)

Instructions

  1. Begin by heating a non-stick skillet over medium heat. Lightly brush it with your chosen oil.
  2. In a mixing bowl, whisk the eggs until fluffy. Gently fold in the shredded cheddar cheese, optional veggies, salt, and pepper.
  3. Dip a rice paper sheet into warm water for about 5 seconds to soften it. Lay the sheet flat on a clean surface.
  4. Spoon a portion of the egg mixture along one edge of the rice paper. Roll it into a log, then coil it into a spiral shape.
  5. Place one spiral into the heated skillet. Cook it slowly over medium-low heat, pressing gently with a spatula for even cooking.
  6. Once the bottom side is golden brown, carefully flip the spiral to crisp up the other side.
  7. While the spirals are still warm, sprinkle them with everything bagel seasoning.
