This creamy Avocado Chicken Salad is made with shredded chicken, ripe avocado, Greek yogurt, cucumber, and fresh herbs for a healthy, protein-packed lunch or easy dinner.

- 1 large ripe avocado, (about 1/2 cup mashed)
- 2 tablespoons plain Greek yogurt
- 1 tablespoon red wine vinegar
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon garlic powder
- 2 cups shredded chicken
- 1/2 cup diced cucumber
- 2 green onions, (sliced)
- 1 1/2 tablespoons finely chopped parsley
- Kosher salt and black pepper, (to taste)
Instructions
- Make the dressing: In a medium bowl, mash the avocado until mostly smooth. You should have about 1/2 cup mashed. Stir in the Greek yogurt, red wine vinegar, lemon juice, and garlic powder until creamy and well combined.
- Add the chicken and mix-ins: Add the shredded chicken, diced cucumber, green onions, and parsley to the bowl. Season with salt and pepper, to taste.
- Toss to combine: Gently stir until everything is evenly coated in the avocado dressing.
- Season and adjust: Taste and add an extra squeeze of lemon juice if you want it brighter.
- Serve: Serve immediately or chill until ready to serve. You can serve on toasted bread, croissants, or sandwich rolls. For a lighter option, spoon it into lettuce cups or enjoy it with crackers, pita chips, or fresh veggies for dipping. It’s also great tucked into a wrap with extra greens or served over a simple green salad.
