Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar, divided
  • 2 teaspoons ground cinnamon, divided
  • 1 cup all-purpose flour, divided
  • 1/2 cup brown sugar, packed
  • 3 medium apples, peeled and diced
  • 1 tablespoon lemon juice
  • 24 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 2 teaspoons vanilla extract
  • 3 large eggs

Instructions

  1. Preheat the oven to 325°F. Lightly grease a 9-inch springform pan and place it on a baking sheet.
  2. In a bowl, mix the graham cracker crumbs, 1/4 cup granulated sugar, and 6 tablespoons melted butter until evenly combined. Press firmly into the bottom of the prepared pan.
  3. In another bowl, stir together 1/2 cup flour, brown sugar, 1 teaspoon cinnamon, and the remaining 2 tablespoons melted butter until crumbly. Set aside.
  4. In a skillet, cook the diced apples with 1/4 cup granulated sugar, lemon juice, and the remaining 1 teaspoon cinnamon for 4 to 5 minutes, just until slightly softened. Let cool slightly.
  5. Beat the softened cream cheese until smooth. Add the remaining 1/2 cup granulated sugar, then mix in the sour cream and vanilla extract. Add the eggs one at a time, mixing on low speed just until combined.
  6. Pour half of the filling over the crust. Spoon the apple mixture over the filling, then add the remaining filling on top. Scatter the crumble evenly over the surface.
  7. Bake for 60 to 70 minutes, until the edges are set and the center still has a slight wobble. Turn off the oven, crack the door, and let the cheesecake sit inside for 30 minutes.
  8. Remove from the oven and cool completely at room temperature. Chill for at least 4 hours, or overnight, before slicing and serving.
