- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar, divided
- 2 teaspoons ground cinnamon, divided
- 1 cup all-purpose flour, divided
- 1/2 cup brown sugar, packed
- 3 medium apples, peeled and diced
- 1 tablespoon lemon juice
- 24 ounces cream cheese, softened
- 1/2 cup sour cream
- 2 teaspoons vanilla extract
- 3 large eggs
Instructions
- Preheat the oven to 325°F. Lightly grease a 9-inch springform pan and place it on a baking sheet.
- In a bowl, mix the graham cracker crumbs, 1/4 cup granulated sugar, and 6 tablespoons melted butter until evenly combined. Press firmly into the bottom of the prepared pan.
- In another bowl, stir together 1/2 cup flour, brown sugar, 1 teaspoon cinnamon, and the remaining 2 tablespoons melted butter until crumbly. Set aside.
- In a skillet, cook the diced apples with 1/4 cup granulated sugar, lemon juice, and the remaining 1 teaspoon cinnamon for 4 to 5 minutes, just until slightly softened. Let cool slightly.
- Beat the softened cream cheese until smooth. Add the remaining 1/2 cup granulated sugar, then mix in the sour cream and vanilla extract. Add the eggs one at a time, mixing on low speed just until combined.
- Pour half of the filling over the crust. Spoon the apple mixture over the filling, then add the remaining filling on top. Scatter the crumble evenly over the surface.
- Bake for 60 to 70 minutes, until the edges are set and the center still has a slight wobble. Turn off the oven, crack the door, and let the cheesecake sit inside for 30 minutes.
- Remove from the oven and cool completely at room temperature. Chill for at least 4 hours, or overnight, before slicing and serving.
