Description
This Zuppa Toscana Casserole transforms the classic Tuscan soup into a warm, creamy, cheesy baked dish loaded with Italian sausage, tender potatoes, kale, and rich cream.
Ingredients

- 1 lb Italian sausage (mild or spicy)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 lb potatoes, thinly sliced
- 3 cups kale, chopped (or spinach)
- 1½ cups heavy cream
- 1½ cups shredded mozzarella or Italian blend cheese
- ½ cup grated Parmesan cheese
- 1 tbsp olive oil
- Salt and black pepper, to taste
- Crushed red pepper flakes
- Bread crumbs for topping
- Cooked pasta instead of potatoes (Zuppa Toscana Pasta)
Instructions
- Heat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
- In a skillet with olive oil, brown the sausage and crumble it. Remove and set aside.
- In the same pan, cook the onion until soft. Add garlic and cook 30 seconds. Add kale and cook until wilted. Season lightly.
- Add half the sliced potatoes to the casserole dish. Layer half the sausage, kale mixture, cheeses, and cream. Repeat layers and finish with Parmesan.
- Cover with foil and bake 30 minutes. Uncover and bake another 15–20 minutes until bubbly and potatoes are tender.
- Let rest 10 minutes before serving.
