Description

This Zuppa Toscana Casserole transforms the classic Tuscan soup into a warm, creamy, cheesy baked dish loaded with Italian sausage, tender potatoes, kale, and rich cream.


Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 lb potatoes, thinly sliced
  • 3 cups kale, chopped (or spinach)
  • 1½ cups heavy cream
  • 1½ cups shredded mozzarella or Italian blend cheese
  • ½ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • Crushed red pepper flakes
  • Bread crumbs for topping
  • Cooked pasta instead of potatoes (Zuppa Toscana Pasta)

Instructions

  1. Heat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
  2. In a skillet with olive oil, brown the sausage and crumble it. Remove and set aside.
  3. In the same pan, cook the onion until soft. Add garlic and cook 30 seconds. Add kale and cook until wilted. Season lightly.
  4. Add half the sliced potatoes to the casserole dish. Layer half the sausage, kale mixture, cheeses, and cream. Repeat layers and finish with Parmesan.
  5. Cover with foil and bake 30 minutes. Uncover and bake another 15–20 minutes until bubbly and potatoes are tender.
  6. Let rest 10 minutes before serving.
