Description
This creamy Zucchini Mais Eintopf is a hearty and healthy zucchini and corn stew made with fresh vegetables, tender potatoes, and a flavorful broth.

- 4 strips bacon (optional), cooked and chopped
- 1/2 large onion, diced
- 2 stalks celery, finely diced
- Corn from 4–5 cobs or about 300 g frozen corn
- 4 cloves garlic, minced
- 1.2 L chicken or vegetable broth
- 2 large potatoes, diced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried parsley
- 1/4 tsp thyme
- Pinch cayenne pepper (optional)
- 1 large zucchini, quartered lengthwise and sliced
- 200 ml cream or plant-based alternative
Instructions
- In a large pot over medium heat, cook bacon (if using) until crispy. Remove bacon, leaving rendered fat in the pot.
- Add onion and celery; sauté for about 3 minutes until soft. Stir in corn and cook for another 4 minutes. Add garlic and sauté until fragrant.
- Pour in broth and bring to a gentle boil. Add potatoes and all seasonings; simmer for about 10 minutes.
- Add zucchini and cook for 10–12 minutes until potatoes are tender and zucchini is just cooked.
- For a creamier texture, blend a portion of the stew and stir it back in. Stir in cream and let sit off heat for 5–10 minutes before serving.

- This stew is ideal for meal prep.
- It is vegan-friendly if you omit the bacon and use plant-based cream.
