Description

This creamy Zucchini Mais Eintopf is a hearty and healthy zucchini and corn stew made with fresh vegetables, tender potatoes, and a flavorful broth.


Ingredients

  • 4 strips bacon (optional), cooked and chopped
  • 1/2 large onion, diced
  • 2 stalks celery, finely diced
  • Corn from 45 cobs or about 300 g frozen corn
  • 4 cloves garlic, minced
  • 1.2 L chicken or vegetable broth
  • 2 large potatoes, diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried parsley
  • 1/4 tsp thyme
  • Pinch cayenne pepper (optional)
  • 1 large zucchini, quartered lengthwise and sliced
  • 200 ml cream or plant-based alternative

Instructions

  1. In a large pot over medium heat, cook bacon (if using) until crispy. Remove bacon, leaving rendered fat in the pot.
  2. Add onion and celery; sauté for about 3 minutes until soft. Stir in corn and cook for another 4 minutes. Add garlic and sauté until fragrant.
  3. Pour in broth and bring to a gentle boil. Add potatoes and all seasonings; simmer for about 10 minutes.
  4. Add zucchini and cook for 10–12 minutes until potatoes are tender and zucchini is just cooked.
  5. For a creamier texture, blend a portion of the stew and stir it back in. Stir in cream and let sit off heat for 5–10 minutes before serving.
