Ingredients

  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook pasta according to package instructions until al dente. Drain, reserving 1/2 cup pasta water.
  2. In a large skillet, heat olive oil over medium heat and sauté garlic for 1 minute until fragrant.
  3. Add spinach and cook until wilted, about 2-3 minutes.
  4. Reduce heat to low and stir in ricotta, Parmesan, lemon zest, and lemon juice. Add reserved pasta water gradually for a creamy sauce.
  5. Toss pasta in the sauce until evenly coated. Season with salt, black pepper, and red pepper flakes if desired.
  6. Serve hot, garnished with fresh basil.
