- 12 ounces pasta (penne or fusilli)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
- Cook pasta according to package instructions until al dente. Drain, reserving 1/2 cup pasta water.
- In a large skillet, heat olive oil over medium heat and sauté garlic for 1 minute until fragrant.
- Add spinach and cook until wilted, about 2-3 minutes.
- Reduce heat to low and stir in ricotta, Parmesan, lemon zest, and lemon juice. Add reserved pasta water gradually for a creamy sauce.
- Toss pasta in the sauce until evenly coated. Season with salt, black pepper, and red pepper flakes if desired.
- Serve hot, garnished with fresh basil.
