Description
A Yule Log — or Bûche de Noël — is a magical Christmas dessert featuring light chocolate sponge, whipped filling, rich ganache frosting, and a dusting of powdered sugar.

- 4 large eggs
- ½ cup granulated sugar
- ¼ cup light brown sugar
- ¾ cup all-purpose flour
- ¼ cup cocoa powder
- 1 tsp baking powder
- ¼ tsp salt
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 1 cup heavy cream
- 3 tbsp powdered sugar
- 1 cup semisweet chocolate chips or chopped chocolate
- 1 tbsp butter
- Powdered sugar (for dusting)
- Fresh berries (for decoration)
- Rosemary sprigs (for decoration)
- Chocolate shavings (for decoration)
- Meringue mushrooms (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment.
- Beat eggs and both sugars until pale, thick, and tripled in volume (about 5 minutes).
- Sift in flour, cocoa, baking powder, and salt. Fold gently.
- Add melted butter and vanilla; fold again.
- Bake: Spread batter evenly in the pan and bake 9–10 minutes until springy to touch.
- Dust a clean kitchen towel with powdered sugar.
- Invert warm cake onto the towel.
- Peel off parchment and immediately roll the cake (short side) with the towel inside.
- Let cool completely.
- Make whipped filling: Beat cream, powdered sugar, and vanilla until stiff peaks form.
- Gently unroll sponge.
- Spread whipped filling evenly.
- Re-roll (without the towel this time).
- Heat cream until steaming; pour over chocolate.
- Add butter; stir until smooth.
- Cool until thick enough to spread.
- Cover cake with ganache.
- Use a fork to create bark lines.
- Dust with powdered sugar and decorate.
