Description

A Yule Log — or Bûche de Noël — is a magical Christmas dessert featuring light chocolate sponge, whipped filling, rich ganache frosting, and a dusting of powdered sugar.


Ingredients

  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • ¾ cup all-purpose flour
  • ¼ cup cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 3 tbsp powdered sugar
  • 1 cup semisweet chocolate chips or chopped chocolate
  • 1 tbsp butter
  • Powdered sugar (for dusting)
  • Fresh berries (for decoration)
  • Rosemary sprigs (for decoration)
  • Chocolate shavings (for decoration)
  • Meringue mushrooms (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment.
  2. Beat eggs and both sugars until pale, thick, and tripled in volume (about 5 minutes).
  3. Sift in flour, cocoa, baking powder, and salt. Fold gently.
  4. Add melted butter and vanilla; fold again.
  5. Bake: Spread batter evenly in the pan and bake 9–10 minutes until springy to touch.
  6. Dust a clean kitchen towel with powdered sugar.
  7. Invert warm cake onto the towel.
  8. Peel off parchment and immediately roll the cake (short side) with the towel inside.
  9. Let cool completely.
  10. Make whipped filling: Beat cream, powdered sugar, and vanilla until stiff peaks form.
  11. Gently unroll sponge.
  12. Spread whipped filling evenly.
  13. Re-roll (without the towel this time).
  14. Heat cream until steaming; pour over chocolate.
  15. Add butter; stir until smooth.
  16. Cool until thick enough to spread.
  17. Cover cake with ganache.
  18. Use a fork to create bark lines.
  19. Dust with powdered sugar and decorate.
