- 2 pounds beef chuck roast, cut into chunks
- 1 large yellow onion, diced
- 3 carrots, peeled and sliced
- 3 celery stalks, chopped
- 4 garlic cloves, minced
- 3 medium potatoes, diced
- 2 tablespoons tomato paste
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- 3 sprigs fresh thyme
- 2 tablespoons olive oil
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
Instructions
- Cut the beef into bite-sized chunks and season with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef in batches until browned. Remove and set aside.
- In the same pot, add diced onions, carrots, and celery. Sauté until softened, then stir in garlic and tomato paste. Cook for another 2 to 3 minutes.
- Return the beef to the pot. Pour in beef broth and Worcestershire sauce. Add potatoes, bay leaf, and thyme. Stir and bring to a simmer.
- Cover and reduce heat to low. Simmer for 2 hours, stirring occasionally, until beef is tender and stew has thickened.
- Remove the bay leaf and thyme stems. Taste and adjust seasoning if needed. Serve hot with crusty bread or over mashed potatoes.
