Description

This Winter Holiday Salad is a festive and delicious dish perfect for holiday meals or any winter gathering. Featuring vibrant baby greens, juicy pears, crunchy pistachios, and tangy goat cheese, it’s topped off with a homemade pomegranate vinaigrette dressing.


Ingredients

  • 5 ounces baby arugula or mixed baby greens or baby spinach
  • 1 large pear, chopped
  • 1/2 cup pomegranate arils
  • 1/2 cup shelled pistachios
  • 1/2 cup crumbled goat cheese
  • 1/4 cup avocado oil
  • 1/4 cup pomegranate juice
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt + pepper, to taste

Instructions

  1. Assemble the salad by placing the baby greens onto a serving platter or salad bowl. Scatter the chopped pear, pomegranate arils, pistachios, and goat cheese crumbles over the top.
  2. In a small bowl or jar, whisk or shake together the pomegranate vinaigrette ingredients: avocado oil, pomegranate juice, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  3. Drizzle the vinaigrette over the salad right before serving or serve it separately alongside the salad.
