Description

White Chocolate Raspberry Truffles are a decadent and creamy treat that combines the sweetness of white chocolate with the tangy flavor of raspberries.

Ingredients

Scale
  • 8 oz White Chocolate
  • 1/2 cup Heavy Cream
  • 1/2 cup Fresh Raspberries
  • 2 tbsp Butter
  • 1/4 cup Powdered Sugar
  • 1 tbsp Coconut Oil (optional)

Instructions

  1. In a medium saucepan, combine fresh raspberries, butter, and powdered sugar. Heat over low to medium heat, stirring occasionally, until the raspberries break down and form a smooth sauce. Let the raspberry mixture cool to room temperature.
  2. In a separate bowl, heat the heavy cream until it begins to simmer. Pour the hot cream over the white chocolate in a heatproof bowl, allowing it to sit for a minute to melt. Stir until the mixture is smooth and fully combined.
  3. Once the white chocolate and cream mixture is smooth, gently fold in the cooled raspberry mixture. Mix until fully incorporated.
  4. Chill the mixture in the refrigerator for at least 2 hours, or until it is firm enough to scoop and roll into balls.
  5. Once the truffle filling has hardened, scoop out small portions and roll them into bite-sized balls using your hands.
  6. If you prefer a glossy finish, melt coconut oil and dip each truffle into the oil before placing them on a parchment-lined baking sheet.
  7. Refrigerate the truffles for an additional 30 minutes to allow them to set fully before serving.
