- 8 oz White Chocolate
- 1/2 cup Heavy Cream
- 1/2 cup Fresh Raspberries
- 2 tbsp Butter
- 1/4 cup Powdered Sugar
- 1 tbsp Coconut Oil (optional)
Instructions
- In a medium saucepan, combine fresh raspberries, butter, and powdered sugar. Heat over low to medium heat, stirring occasionally, until the raspberries break down and form a smooth sauce. Let the raspberry mixture cool to room temperature.
- In a separate bowl, heat the heavy cream until it begins to simmer. Pour the hot cream over the white chocolate in a heatproof bowl, allowing it to sit for a minute to melt. Stir until the mixture is smooth and fully combined.
- Once the white chocolate and cream mixture is smooth, gently fold in the cooled raspberry mixture. Mix until fully incorporated.
- Chill the mixture in the refrigerator for at least 2 hours, or until it is firm enough to scoop and roll into balls.
- Once the truffle filling has hardened, scoop out small portions and roll them into bite-sized balls using your hands.
- If you prefer a glossy finish, melt coconut oil and dip each truffle into the oil before placing them on a parchment-lined baking sheet.
- Refrigerate the truffles for an additional 30 minutes to allow them to set fully before serving.
