  • 4 cups (32 oz) low-sodium chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 cup corn (fresh, canned, or frozen)
  • 1 can (4 oz) diced green chilies
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon ground coriander
  • ¼ teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste (start with ½ teaspoon each)
  • 4 oz Neufchâtel cheese or cream cheese, cubed
  • 2 tablespoons fresh lime juice (about 1 lime)
  • ¼ cup chopped fresh cilantro
  • Optional toppings: shredded cheese, diced avocado, tortilla chips or strips, extra chopped cilantro

Instructions

  1. In a large pot, heat 1 tablespoon olive oil over medium heat. Add diced onion and sauté until softened (about 4 minutes). Add garlic and cook for another 30 seconds.
  2. Stir in chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 15 minutes.
  3. While simmering, blend 1 cup of the drained white beans with ½ cup broth until smooth. Add the blended beans back into the pot for a creamy texture.
  4. Add the Neufchâtel cheese, remaining whole beans, and corn. Stir until cheese melts and chili thickens slightly (5–10 minutes).
  5. Stir in shredded chicken, lime juice, and chopped cilantro. Taste and adjust seasoning as needed. Serve hot with desired toppings.

Notes

  • This recipe can be made dairy-free or vegetarian by omitting the cheese and using vegetable broth.
