- 3 cups shredded cooked chicken (rotisserie or leftover)
- 4 cups (32 oz) low-sodium chicken broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 cup corn (fresh, canned, or frozen)
- 1 can (4 oz) diced green chilies
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 ½ teaspoons ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- ½ teaspoon ground coriander
- ¼ teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste (start with ½ teaspoon each)
- 4 oz Neufchâtel cheese or cream cheese, cubed
- 2 tablespoons fresh lime juice (about 1 lime)
- ¼ cup chopped fresh cilantro
- Optional toppings: shredded cheese, diced avocado, tortilla chips or strips, extra chopped cilantro
Instructions
- In a large pot, heat 1 tablespoon olive oil over medium heat. Add diced onion and sauté until softened (about 4 minutes). Add garlic and cook for another 30 seconds.
- Stir in chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 15 minutes.
- While simmering, blend 1 cup of the drained white beans with ½ cup broth until smooth. Add the blended beans back into the pot for a creamy texture.
- Add the Neufchâtel cheese, remaining whole beans, and corn. Stir until cheese melts and chili thickens slightly (5–10 minutes).
- Stir in shredded chicken, lime juice, and chopped cilantro. Taste and adjust seasoning as needed. Serve hot with desired toppings.
Notes
- This recipe can be made dairy-free or vegetarian by omitting the cheese and using vegetable broth.
