- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups vegetable or chicken broth
- 2 cans (15 ounces each) white beans, drained and rinsed
- 1 cup kale or spinach, chopped (optional)
- 1 tablespoon lemon juice (optional)
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic. Sauté until onion is translucent, about 3-4 minutes.
- Stir in diced carrots and celery. Cook for 5-7 minutes until they begin to soften.
- Add dried thyme, dried rosemary, salt, and pepper. Stir to combine.
- Pour in vegetable or chicken broth and bring to a simmer.
- Stir in the drained and rinsed white beans. Let the soup simmer for 10-15 minutes.
- If using, add chopped kale or spinach during the last 5 minutes of cooking.
- For a creamier texture, blend part of the soup with an immersion blender or transfer a portion to a regular blender and blend until smooth. Return to the pot.
- Stir in lemon juice, if desired.
- Ladle the soup into bowls and garnish with fresh parsley, if using.
- Serve warm.
