- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 3 cans white beans, drained and rinsed
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups spinach or kale
- 1/4 cup grated Parmesan cheese
- 6 slices crusty bread
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, then cook for 6 to 8 minutes until softened.
- Stir in the garlic and tomato paste, then cook for 1 minute until fragrant.
- Add the white beans, vegetable broth, diced tomatoes, Italian seasoning, salt, and black pepper. Stir well and bring to a gentle simmer.
- Simmer for 20 minutes, stirring occasionally, until the vegetables are tender and the broth tastes rich.
- Mash about 1 cup of the beans in the pot with the back of a spoon to thicken the soup slightly, if desired.
- Stir in the spinach or kale and cook for 2 to 3 minutes until wilted.
- Taste and adjust seasoning if needed.
- Ladle into bowls and top with Parmesan cheese. Serve hot with crusty bread.
