- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 (15-ounce) cans white beans, drained and rinsed
- 4 cups chicken or vegetable broth
- 1/2 cup prepared pesto
- 1 teaspoon dried thyme
- 1/2 teaspoon crushed red pepper flakes
- Salt and black pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the diced onion and sauté for 5-7 minutes, until translucent.
- Add the minced garlic and sauté for an additional minute, until fragrant.
- Add the drained and rinsed white beans, chicken or vegetable broth, pesto, dried thyme, and crushed red pepper flakes. Stir to combine.
- Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally, until the flavors have melded and the soup has thickened slightly.
- Season with salt and black pepper to taste.
- Serve the White Bean Pesto Soup warm, garnished with grated Parmesan cheese (if desired).
