Ingredients

- 4 cups fresh kale, chopped
- 1/2 cup dried cranberries
- 1/2 cup crumbled feta or goat cheese
- 1/4 cup walnuts or pecans, toasted
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped kale and sauté for 3-4 minutes until slightly wilted.
- Add dried cranberries and cook for another 1-2 minutes.
- Whisk together balsamic vinegar, honey, salt, and black pepper in a small bowl.
- Pour dressing over kale and toss to combine.
