Warm and Gooey Homemade Cinnamon Rolls You’ll Crave


Ingredients

  • 1/3 cup light brown sugar
  • 1/2 cup melted butter
  • 1 tbsp vanilla extract
  • 1/4 cup granulated sugar
  • 2 1/4 tsp active dry yeast
  • 1 cup warm milk
  • 1 large egg
  • 4 2/3 cups all-purpose flour
  • 1 1/2 tsp salt
  • 6 tbsp softened butter
  • 1/2 cup brown sugar
  • 1 1/2 tbsp cinnamon
  • 2 cups powdered sugar
  • 4 oz softened cream cheese
  • 1 tsp vanilla extract
  • 1 to 2 tbsp milk

Instructions

  1. In a bowl, combine 1 cup of warm milk, 1/4 cup of granulated sugar, and 2 1/4 teaspoons of active dry yeast. Stir gently and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine 4 2/3 cups of all-purpose flour, 1/3 cup of light brown sugar, 1 1/2 teaspoons of salt, and 1/2 teaspoon of cinnamon. Whisk well.
  3. In a microwave-safe bowl, melt 1/2 cup of butter until fully liquid. Allow it to cool a bit before using.
  4. Once the yeast mixture is frothy, add the cooled melted butter, 1 large egg, and 1 tablespoon of vanilla extract. Mix on low speed then gradually knead for 8-10 minutes until tacky.
  5. Lightly oil a large bowl, place your dough inside, and let it rise covered until doubled in size, approximately 1.5 to 2 hours.
  6. In a medium bowl, mix together 1/2 cup of brown sugar and 1 1/2 tablespoons of cinnamon, which will be used for the filling.
  7. Turn the dough out onto a lightly floured countertop and roll it into a 12×24 inch rectangle. Spread 6 tablespoons of softened butter over it, leaving a 1/2 inch border, then sprinkle the cinnamon sugar mixture over the surface.
  8. Starting from the long edge, roll the dough tightly into a log and cut it into 2-inch slices using unwaxed dental floss.
  9. Pinch the bottom of each roll to form a spiral. Place them in a buttered 9×13 inch baking dish and cover again to rise for another hour.
  10. Preheat your oven to 350°F (175°C). Bake the rolls for 20-25 minutes until puffed and golden brown.
  11. In a medium bowl, mix 2 tablespoons of softened butter, 4 oz of softened cream cheese, a pinch of salt, and 1 teaspoon of vanilla. Gradually add in 2 cups of powdered sugar and mix until smooth.
  12. As soon as the cinnamon rolls come out of the oven, generously spread a third of the icing over them while still warm.
