- 12 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh basil leaves, chopped
- 1/2 cup feta cheese, crumbled
- 3 tbsp extra-virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Cook the tortellini in a large pot of salted boiling water until al dente (about 3–5 minutes). Drain and rinse under cold water.
- In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, and basil.
- In a small bowl or jar, whisk together olive oil, lemon juice, salt, and pepper.
- Add the cooled tortellini to the vegetable mixture. Drizzle with dressing and gently toss until evenly coated.
- Top with crumbled feta cheese before serving.
