Description

Ingredients

  • 1 cup cooked quinoa (about 1/2 cup dry)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1/2 cup finely chopped broccoli
  • 1/2 cup grated carrot
  • 1/4 cup finely chopped bell pepper (any color)
  • 2 large eggs
  • 2 tablespoons finely chopped onion (optional)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan.
  2. If you haven’t already, cook your quinoa according to package directions and let it cool slightly.
  3. In a large mixing bowl, combine the cooked quinoa, shredded cheese, chopped vegetables, eggs, and seasonings. Mix until everything is well combined and evenly distributed.
  4. Spoon the mixture into your prepared mini muffin tin, filling each cavity to the top and pressing down gently with the back of a spoon to compact.
  5. Bake for 18–22 minutes, or until the bites are golden on top and hold together when touched.
  6. Let the bites cool in the pan for a few minutes before gently removing with a small knife or spoon. Serve warm or at room temperature.
