Description

Vegan Tlayudas are a vibrant, plant-based take on the traditional Oaxacan dish, often referred to as ‘Mexican pizza.’


Ingredients

  • 4 large corn tortillas
  • 1 cup canned black beans (rinsed)
  • 1 cup assorted fresh vegetables (bell peppers, zucchini, corn)
  • 1 avocado (sliced)
  • 1 cup vegan cheese
  • ½ cup salsa verde
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Place corn tortillas on the baking sheet and spread a layer of black beans on each.
  3. Top with sliced vegetables for added color and crunch.
  4. Sprinkle vegan cheese over the toppings and drizzle with salsa verde.
  5. Bake for 15-20 minutes until the cheese melts and the tortillas turn golden brown.
  6. Remove from oven and cut into quarters. Garnish with avocado slices, chopped cilantro, and lime juice.
