Vegan Tlayudas are a vibrant, plant-based take on the traditional Oaxacan dish, often referred to as ‘Mexican pizza.’
Ingredients

- 4 large corn tortillas
- 1 cup canned black beans (rinsed)
- 1 cup assorted fresh vegetables (bell peppers, zucchini, corn)
- 1 avocado (sliced)
- 1 cup vegan cheese
- ½ cup salsa verde
- Fresh cilantro and lime wedges for garnish
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- Place corn tortillas on the baking sheet and spread a layer of black beans on each.
- Top with sliced vegetables for added color and crunch.
- Sprinkle vegan cheese over the toppings and drizzle with salsa verde.
- Bake for 15-20 minutes until the cheese melts and the tortillas turn golden brown.
- Remove from oven and cut into quarters. Garnish with avocado slices, chopped cilantro, and lime juice.
