- 0.75 cup powdered sugar (for rolling)
Instructions
- Beat vegan butter and powdered sugar in a large bowl until light and fluffy.
- Mix in vanilla extract until fully combined.
- Gradually stir in flour and salt to form a soft dough.
- Fold in finely chopped walnuts.
- Chill dough for 30 minutes to firm up.
- Preheat oven to 350°F (175°C).
- Roll dough into 1-inch balls and place on parchment-lined baking sheet.
- Bake for 12 to 15 minutes, until bottoms are lightly golden.
- While warm, roll cookies in powdered sugar.
- Let cool completely and roll in powdered sugar again before serving.
