- 1/2 cup dried cranberries
- 1/2 cup vegan chocolate chips
- 1 tablespoon flaxseed meal
- 3 tablespoons water
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the flax egg by mixing 1 tablespoon of flaxseed meal with 3 tablespoons of water. Let sit for 5 minutes.
- In a large bowl, combine the flax egg, melted coconut oil, maple syrup, and vanilla extract. Stir well.
- Add rolled oats, baking powder, and salt to the wet mixture. Mix until combined.
- Fold in dried cranberries and chocolate chips.
- Scoop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, until the edges are golden brown.
- Let the cookies cool on the sheet for a few minutes, then transfer to a wire rack to cool completely.
