Ingredients

- 2 cups cooked rice
- 1 can black beans, rinsed and drained
- 1 ripe mango, diced
- 1 cup corn
- 1 avocado, sliced
- 1/4 cup red onion, chopped
- 1/2 cup fresh cilantro
- 2 tablespoons lime juice
- 2 cloves garlic
- 2 tablespoons olive oil
- 1/2 teaspoon salt
Instructions
- Cook rice according to package instructions and let it cool slightly.
- Blend cilantro, lime juice, garlic, olive oil, and salt to make green sauce.
- Mix the green sauce into the cooked rice.
- Rinse and prepare black beans.
- Dice mango, slice avocado, and chop onion.
- Assemble bowls with green rice as the base.
- Add black beans, mango, corn, and toppings.
- Serve fresh with extra lime juice.
