- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup unsweetened almond milk
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
- 2 tablespoons melted coconut oil
- 2 to 3 cups vegetable oil for frying
- 1 1/2 cups powdered sugar
- 2 to 3 tablespoons unsweetened almond milk for glaze
- 2 tablespoons rainbow sprinkles
Instructions
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- In a separate bowl, stir together the almond milk, apple cider vinegar, vanilla extract, and melted coconut oil. Let it sit for 1 minute.
- Pour the wet mixture into the dry ingredients and stir until a soft dough forms.
- Lightly flour a clean surface and roll the dough to about 1/2 inch thick. Cut into donut shapes.
- Heat the vegetable oil in a deep pot to 350°F.
- Fry the donuts in small batches for 1 to 2 minutes per side until golden brown. Transfer to a wire rack lined with paper towels.
- In a small bowl, whisk the powdered sugar with 2 to 3 tablespoons almond milk until smooth.
- Dip the slightly cooled donuts into the glaze and top with rainbow sprinkles before the glaze sets.
