Creamy Vegan Cashew Boursin Cheese in Just 5 Ingredients

- 1 cup Raw cashews (Soaked in water)
- 1/2 cup Nondairy milk (Cashew or almond milk)
- 2 tablespoons Freshly squeezed lemon juice
- 1 teaspoon Garlic powder (Adjust to taste)
- 1/4 teaspoon Fine sea salt (Adjust to taste)
- 1/4 cup Chopped fresh herbs (Mix of parsley, chives, or dill)
Instructions
- Soak cashews: Place the raw cashews in a mason jar or glass bowl. Fill with 2 cups boiling water and let them soak for 15 to 20 minutes. Drain and rinse well.
- Blend ingredients: In a small food processor or handheld blender, combine the soaked cashews, nondairy milk, lemon juice, garlic powder, and 1/4 teaspoon sea salt.
- Process until smooth: Blend until the mixture is very smooth and creamy, about 3 to 4 minutes.
- Fold in herbs: Transfer mixture into a bowl and stir in chopped fresh herbs. Adjust salt for taste.
- Shape and chill: Spoon mixture into a dish lined with cheesecloth or plastic wrap. Pack down and cover tightly. Refrigerate for at least 4 hours until cold and firm.
- Serve and enjoy: Once chilled, unmold cheese onto a plate and serve with veggies, crackers, or bread.
