- 1 (15 oz) can black beans, rinsed and drained
- 1 large ripe avocado, mashed
- ½ cup frozen or canned corn, thawed or drained
- ¼ cup finely chopped red onion
- ¼ cup fresh cilantro, chopped
- 1 tablespoon fresh lime juice
- ½ teaspoon cumin powder
- ¼ teaspoon chili powder (adjust to taste)
- Salt and black pepper, to taste
- 4 large (10-inch) flour tortillas (whole wheat or gluten-free if needed)
Instructions
- In a bowl, mash the avocado until smooth.
- Add black beans, corn, red onion, cilantro, lime juice, cumin, and chili powder.
- Season with salt and pepper to taste. Mix everything together until well combined.
- Spoon the filling evenly onto each tortilla.
- Fold the sides in, then roll up tightly into burritos.
- Serve immediately or wrap and refrigerate for a grab-and-go meal.
