Instructions
- In a large bowl, combine the fresh broccoli florets, finely chopped red onion, shredded carrots, dried cranberries, and sunflower seeds.
- In a separate small bowl, whisk together the vegan mayonnaise, unsweetened vegan yogurt, maple syrup, apple cider vinegar, salt, and black pepper until smooth. This creates your creamy vegan dressing.
- Pour the dressing over the broccoli mixture.
- Toss gently until all the ingredients are well coated with the dressing.
- For best results, cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld before serving.
