Description

Veal Scallopini is a quick and elegant Italian dish made with tender veal cutlets, mushrooms, and a rich butter sauce.


Ingredients

  • 2 veal cutlets, pounded thin
  • 2 tbsp flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 tbsp butter, divided
  • 1 tbsp olive oil
  • 8 oz fresh mushrooms, sliced
  • 1/3 cup rich chicken stock
  • 1 tbsp fresh parsley, minced

Instructions

  1. Combine flour, salt, and pepper in a shallow dish. Coat the veal cutlets in the flour mixture.
  2. Heat a large skillet over medium heat. Add 2 tbsp butter and cook the veal for 1 minute on each side until juices run clear. Remove veal and set aside.
  3. Add mushrooms to the skillet and cook, stirring frequently, until they begin to brown (about 5 minutes). Remove mushrooms and set aside with the veal.
  4. Deglaze the pan with chicken stock, scraping up any brown bits. Add the remaining butter and parsley. Cook for 1-2 minutes until the sauce thickens slightly.
  5. Return the veal and mushrooms to the skillet. Heat through for 2 minutes and serve.
