Description
Veal Scallopini is a quick and elegant Italian dish made with tender veal cutlets, mushrooms, and a rich butter sauce.

- 2 veal cutlets, pounded thin
- 2 tbsp flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 tbsp butter, divided
- 1 tbsp olive oil
- 8 oz fresh mushrooms, sliced
- 1/3 cup rich chicken stock
- 1 tbsp fresh parsley, minced
Instructions
- Combine flour, salt, and pepper in a shallow dish. Coat the veal cutlets in the flour mixture.
- Heat a large skillet over medium heat. Add 2 tbsp butter and cook the veal for 1 minute on each side until juices run clear. Remove veal and set aside.
- Add mushrooms to the skillet and cook, stirring frequently, until they begin to brown (about 5 minutes). Remove mushrooms and set aside with the veal.
- Deglaze the pan with chicken stock, scraping up any brown bits. Add the remaining butter and parsley. Cook for 1-2 minutes until the sauce thickens slightly.
- Return the veal and mushrooms to the skillet. Heat through for 2 minutes and serve.
