- Heat Cream and Milk: In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir until the sugar dissolves and the mixture is hot but not boiling.
- Add Vanilla: Remove from heat and stir in the vanilla extract.
- Incorporate Gelatin: Add the bloomed gelatin to the warm cream mixture, stirring until completely dissolved.
- Pour Mixture: Divide the panna cotta mixture evenly into serving glasses or ramekins.
- Chill: Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
- Mix Berries: In a medium bowl, combine the mixed fresh berries, granulated sugar, and lemon juice. Toss gently to coat the berries evenly.
- Let Sit: Allow the mixture to sit for about 15 minutes to let the berries release their juices.
- Top Panna Cotta: Once the panna cotta is set, remove it from the refrigerator. Spoon the berry mixture over the top of each panna cotta.
- Garnish: Optionally, garnish with mint leaves or a dusting of powdered sugar before serving.
- Tips: For a more decadent flavor, consider adding a splash of vanilla bean paste instead of extract.
