- For the Macaron Shells:
- 1 cup (100g) almond flour
- 1 3/4 cups (200g) powdered sugar
- 3 large egg whites
- 1/4 cup (50g) granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- For the Vanilla Filling:
- 1/2 cup (115g) unsalted butter
- 1 1/2 cups (180g) powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons heavy cream
Instructions
- In a food processor, combine almond flour and powdered sugar. Pulse until finely ground.
- Sift the mixture into a bowl to remove larger pieces.
- In a clean bowl, beat egg whites with a pinch of salt until foamy.
- Gradually add granulated sugar, whipping until stiff peaks form.
- Add vanilla extract and mix briefly.
- Gently fold the almond flour mixture into the egg whites in three additions.
- The batter should flow smoothly and form a thick ribbon.
- Line baking sheets with parchment paper.
- Transfer the batter to a piping bag with a round tip.
- Pipe 1.5-inch circles, leaving space between each.
- Tap the sheets gently to release air bubbles.
- Let macarons rest for 30-60 minutes until a skin forms.
- Preheat oven to 300°F (150°C).
- Bake one sheet at a time for 15-20 minutes.
- Cool completely on baking sheets before removing.
- Beat softened butter until creamy.
- Gradually add powdered sugar, mixing until smooth.
- Add vanilla extract and heavy cream, mixing until spreadable.
- Pair up cooled macaron shells by size.
- Pipe filling onto one shell and sandwich with another.
- Press gently to spread filling.
- Refrigerate assembled macarons for at least 24 hours before serving.
