  • 12 tablespoons heavy cream

Instructions

  1. In a food processor, combine almond flour and powdered sugar. Pulse until finely ground.
  2. Sift the mixture into a bowl to remove larger pieces.
  3. In a clean bowl, beat egg whites with a pinch of salt until foamy.
  4. Gradually add granulated sugar, whipping until stiff peaks form.
  5. Add vanilla extract and mix briefly.
  6. Gently fold the almond flour mixture into the egg whites in three additions.
  7. The batter should flow smoothly and form a thick ribbon.
  8. Line baking sheets with parchment paper.
  9. Transfer the batter to a piping bag with a round tip.
  10. Pipe 1.5-inch circles, leaving space between each.
  11. Tap the sheets gently to release air bubbles.
  12. Let macarons rest for 30-60 minutes until a skin forms.
  13. Preheat oven to 300°F (150°C).
  14. Bake one sheet at a time for 15-20 minutes.
  15. Cool completely on baking sheets before removing.
  16. Beat softened butter until creamy.
  17. Gradually add powdered sugar, mixing until smooth.
  18. Add vanilla extract and heavy cream, mixing until spreadable.
  19. Pair up cooled macaron shells by size.
  20. Pipe filling onto one shell and sandwich with another.
  21. Press gently to spread filling.
  22. Refrigerate assembled macarons for at least 24 hours before serving.
